Brooklyn-based distillery Halftone Spirits has unveiled its winter seasonal gin, Wavelength Noir. The liquid joins the brand’s Wavelength series, which already includes magenta, a summery gin that’s naturally colored by dried raspberries and cochineal.
Halftone Spirits Wavelength: noir is distilled with elderberry, smoked black tea, and cinnamon, which are all rested atop a classic bed of juniper, coriander, and orange peel. The gin is then aged on cacao nibs from the distillery’s neighbors at Fine & Raw chocolates in Bushwick for two weeks. The resulting spirit balances chocolate, smoke, and lush fruit flavors from the complementary elderberry.
In total, 14 botanicals are used to create the gin, including the previously mentioned juniper, elderberry, lapsang souchong tea, cinnamon leaf, blood orange peel, and coriander, as well as black cherry bark, white peppercorn, urfa chili, angelica root, orris root, licorice root, gentian, and almond.
Halftone focuses on small batch, botanically diverse spirits as it experiments with the intersection of flavors and push the boundaries of what gin is and can be. All of the brand’s spirits are distilled on-premise from 100% New York State agriculture. The gin is infused with botanicals sourced from all over the world and hand crushed immediately before distillation.
