Australian distillery Applewood has released Coral Gin, a pink spirit inspired by its surrounding ecosystem. Pink Gin is certainly all the rage these days, and now the Adelaide Hills-based brand has brought substance to blush with their sustainability conscious product that gives a portion of its sales towards the restoration of the Great Barrier Reef.

The distillery aims to highlight the role of native Australian ingredients in its Gin. Applewood sourced strawberry gum, riberry, and karkalla as key ingredients to create their Coral spirit. Its color echoes the rosy tones of coral found in the reef. Furthermore, Brendan Carter, co-owner and creative director of Applewood, told Vogue Living that “All of the ingredients are sustainably sourced from farmers from across the country (bar the juniper, that is imported).” He added, “Most of the botanicals are sourced from Queensland or northern New South Wales.”

When it comes to serving, Applewood suggests pairing it with your favorite tonic and topping it with orange peel and mint or garnishing with pink peppercorns and vanilla. If you’re looking for something a tad bit fancier, the Australian distillery recommends taking a shot at making a Coral Gin Fizz:

Coral Gin Fizz

Ingredients:

  • 2 ozs coral gin
  • 1 oz pineapple juice
  • 1 oz cream
  • Bar spoon of molasses
  • 3 drops of vanilla extract
  • 3 drops of wonderfoam
  • Soda

Add all ingredients except soda with ice in a cocktail shaker and shake, then dry shake. Double strain into a tall glass and let settle. Top with soda and ice. Garnish with Pineapple Leaf.

Outside of Coral Gin, Applewood also makes a core Gin as well as a navy strength variety, along with bitters, a coffee liqueur, limoncello, and something dubbed “Outback Liqueur.” The company desires to decrease their carbon footprint, which is part of the reason for their love of native flavours.
