Cognac Park Borderies offers the truest expression of this Borderies-situated Maison. The Borderies is Cognac’s smallest region, which makes Park’s bottling unique among its rivals. As a single vineyard expression, it’s designed to showcase the floral, light qualities of the terroir, and also serves as a transition point between the VSOP and XO.

Composed of 100% Borderies eaux de vie made from ugni blanc, it’s one of few Cognacs made from just this region’s grapes. Aged 15 years in total, the spirit spends its first 10 months in new Limousin oak casks before being transferred to older casks.

On the nose, aromas of wild violets, citrus, and red wine mix with notes of apricot jam. The palate is fine and elegant, delivering red fruits, spice, and oak. The finish is long with flavors of vanilla, sherry, and butterscotch left lingering. It’s an elegant and fine spirit.

Cognac Park Borderies Food Pairing

This is certainly a Cognac that is worth sipping on its own, but if you feel compelled to pair it with food, Park recommends crunchy banana fritters, hot chocolate coulis, and macadamia nut brittle.
