Elijah Craig has unveiled its latest Barrel Proof bourbon, C921, which comes in at an impressive 120.2 Proof. Several times per year, the Kentucky brand releases limited edition bottles of its famed whiskey at a higher proof – the common bottle of Elijah Craig is bottled at 94 proof.
The new Elijah Craig Barrel Proof C921 is the third and final edition to be released in 2021. It is a 12 year old, uncut variant of Elijah Craig Small Batch that will vary in proof from batch to batch and which, as the brand puts it, is “a true testament of the consistency of quality and attention to detail at Heaven Hill Distillery.”
When looking across the spectrum of Barrel Proof releases out there, it should be noted each batch number “on the label provides specific information about each batch. The first letter indicates the order of the release for that year, starting with “A.” The first number represents the month of the release. The third and fourth digits indicate the year.”
On the nose, the whiskey offers aromas of caramel with toasted oak, fruit notes of apple and orange. The palate features rich vanilla, caramel, and butterscotch along with spices of black pepper and cinnamon at the back of the palate. The finish is nicely layered and showcases all flavors, fading slowly then lingering as it cools.

Last year, Elijah Craig released Toasted Barrel Kentucky Straight Bourbon Whiskey. The spirit hit shelves last September. Bottled at 94 proof, the whiskey is one of few new expressions from the Kentucky-based brand. According to the distillery, the whiskey is “big, rich and complex with spice and pepper notes that fade into milk chocolate with a hint of smoke as the finish lingers with chocolate and baking spices.”
