Grace O’Malley Unveils Dark Char Cask Irish Whiskey

Grace O’Malley Irish Spirits has unveiled Grace O’Malley Dark Char Cask Irish Whiskey. The new offering is the third special release from the Co Mayo-based brand.

Combining multiple batches of Whiskey of varying age statements to deliver the perfect balance of fruitiness, age, character, complexity, and smoothness, the Irish Whiskey is finished in deep char casks. The extra time in the darkness brings a sweetness with hints of roasted coffee bean in a long smooth finish with vanilla and caramel notes.

A blend of high content double distilled (40%) and triple distilled (6%) malt, Grace O’Malley Dark Char Cask Irish Whiskey joins the brand’s premium range of limited release Whiskeys, including the much acclaimed, award winning Grace O’Malley Rum Cask Irish Whiskey, which was launched last year.  

Responsible for the decisions at every step in the blending, ageing and finishing process of all Grace O’Malley Irish Whiskeys is world renowned spirits expert, Cellar Master & Blender, Paul Caris – the man responsible for calling when a blend has reached perfection. 

Speaking about the limited edition blend Caris said, “Charring a cask primes the wood to release flavours such as vanilla and toffee notes, we have toasted and charred French Oak and American Oak casks to level 4 and used these in finishing.  It gives added complexity and depth to the whiskey.”

The team behind Grace O’Malley is also responsible for Proclamation Blended Irish Whiskey. Th Irish whiskey was created to honor the historical 1916 Proclamation defining Ireland’s independence, and was launched in the U.S. in September of last year. Owned by Inis Tine Uisce Teoranta (ITUT), based in Co. Mayo, Proclamation was a collaborative effort by leading technical specialists, craftspeople, and spirits professionals to present an original Irish whiskey blend of singular taste and exceptional quality. Crafted from the finest Irish grain and malt whiskeys, the Proclamation blend is triple distilled and aged in American oak barrels.
