L’Amour en Cage (literal translation: “love in a cage”) is what the French call a Physalis, a nightshade that comes wrapped in a papery husk. This bubbly gin fizz meets spritz is especially good when paired with Latin American cuisine, which is why you’ll probably be staying around Candelaria for a second drink with your meal.

What inspired the name? What’s this drink’s origin story?
It’s the French Nickname for a Physalis. We were experimenting with using this fruit when it was in Season in France as it has a super strong link with Colombian cuisine and we try to use all the parts of the fruit.

What food is this cocktail best served with?
It’s a light acidic and bitter drink but which is super balanced. It goes great at any point in the meal.
Ingredients
Gin, Fermented Physalis, Physalis Paper infused Lutèce Aperitif, Foamer & Soda Water
- 30ml Never Never Gin
- 20ml Physalis Paper Lutèce
- 30ml Fermented Physalis Cordial
- 0.3ml Miraculous Foamer
- 60ml Soda Water
Directions
Shake it up, add some soda, then serve straight up in a fizz glass. Garnish with an opened Physalis.
