Mackmyra Debuts Björksav, A Birch Sap Wine Finish Whisky

Mackmyra has unveiled Björksav, a whisky finished in birch sap wine casks. The new offering is the Swedish distillery’s limited edition spring release and will be available at retailers across the globe in March 2021.

Mackmyra Björksav has been partially matured in casks saturated with Swedish birch sap wine from Grythyttan Vin. It is created from a majority ex- Bourbon, ex-Oloroso and Birch sap wine casks, and also makes use of Mackmyra’s Swedish Oak casks.

“Björksav is a floral and fruity whisky with a light spiciness, vanilla fudge, cedar and toasted bread, with clear notes of birch sap wine. Björksav evokes that feeling of spring,” said Angela D’Orazio, Master Blender Mackmyra.

On the nose, the whisky offers floral and fruity aromas with a light spiciness, vanilla fudge, sandalwood, cedar and toasted bread. There are floral and slightly waxy notes of birch sap wine, along with round and fruity notes of cherry, raisins, apple, pear, and lemon. The palate offers a fresh and fruity spiciness with light minerals and herbs together with vanilla fudge, raisins, apple, ripe pears, and lemon. The finish is light with spicy notes in harmony with toasted oak and dried fruits.

The distillery releases two new limited editions every year, which are adapted to the season’s flavors. This has been a tradition in Sweden for 16 years and the seasonal editions have helped the distillery gain a positive international reputation.

Bottled at 46.1% ABV, just 15,000 bottles of Mackmyra Björksav will be made available and are priced at £59.90 ($83 USD).

In December, Mackmyra unveiled the latest edition to its Moment range, Körsbärsrök, which translates to Cherry Smoke. The offering joined the line that showcases the Swedish Distillery’s most exclusive casks in very limited editions. Like all Mackmyra releases, the whisky is aged in Bodås Mine, a former iron mine that the distillery has repurposed to store their casks.
