New York’s iconic The Dead Rabbit will take over the Lapidus Bar at the Ritz Carlton hotel in Miami for the whole of December. Back in 2016, the Financial District drinks space topped The World’s 50 Best Bars list.

“Big news: from the start of December until New Year’s Eve the Dead Rabbit will be in residency in the Lapidus Bar at the Ritz Carlton in South Beach, Miami,” shared the bar on its Instagram. “@jillianvose and some of the rest of the team will be serving a selection of original cocktails, hot drinks (including our Irish Coffee and Spiked Hot Chocolate), and offering cocktail classes too. And as for the character in the sharp suit and tie, don’t be fooled. Underneath he’s still The Rabbit. Sorry about that, South Beach.”

The bar is best known for its inventive cocktails and large whisky collection, which they will aim to mimic in this Miami Beach pop-up. Cocktails will stay true to their Irish recipes while tapping into Miami’s exotic flair. “A hotel rich in history, The Ritz-Carlton, South Beach has long been a place to celebrate the ever-evolving cocktail culture of Miami, and because of this, we couldn’t be more excited to introduce The Dead Rabbit to Miami,” said Matthew Kiner, Director of Food & Beverage, The Ritz-Carlton, South Beach.

Some new cocktails for the South Beach bar include South Beach Belle View, Mexican Tuxedo, The Unusual, and Praia Provence, which have been carefully curated alongside The Dead Rabbit’s Beverage Director Jillian Vose and The Ritz-Carlton, South Beach’s Head Bartender Enzo Cangemi.

“We have always looked to redefine the Irish Bar experience, constantly asking ourselves how to elevate and evolve to create a memorable and hospitable experience for our guests,” commented Vose. “Having the opportunity to showcase this through our residency at The Ritz-Carlton, South Beach is a perfect testament to our commitment.”
