The Pimm’s 6.0 is just like the original Pimm’s Cup, except not at all, as it’s clarified and carbonated. Still, it manages to perfectly sum up The Cambridge Public House, one of our favorite bars in Paris. It’s the perfect drink for a laid back day at the bar, where one is looking for something familiar and elevated that they can enjoy time and again.

Name the cocktail: Pimm’s 6.0
What inspired the name? What’s this drink’s origin story?
The cocktail is inspired by a classic Pimm’s Cup, but done in a modern way using carbonation and clarification. The same way Three Sheets did their French 75, it was our big inspiration. We change it once a year with a different gin, wine and apéritif, but the structure stays the same. It started with the 2.0 and now we are on 6.0.
What other drinks belong in its family?
It’s little outside any big cocktail family, because of the way it’s built and served. The Pimm’s 6.0 it’s the little brother of the Pimm’s Cup, which I guess makes it a punch drink.

What food is this cocktail best served with?
The cheese of the moment is a good one to have while drinking a Pimm’s 6.0. I see a Brillat-Savarin, a light goat cheese, served with a fresh fruit puree and toasted bread.
Ingredients
- 30ml Pimm’s
- 10ml Hendrick’s Gin
- 15ml Cocchi Rosa
- 30ml Rosé Wine
- 5ml Clarified Lemon
- 7.5ml Verjus
- 3.125ml Simple syrup
- 45ml Water
Directions
Batch the ingredients all together, chill and carbonate a few times. Serve in a wine glass the same way you would drink a sparkling wine.
