What inspired the name? What’s this drink’s origin story?
The drink is like a SideCar, a Brandy Crusta, and a Bellini all had a sidebar conversation about how to become a new cocktail, hence the name.

This drink goes great with lighter fare like sashimi and tartar. Food that doesn’t over power its drinking companions.
Ingredients
- 1 oz Remy Martin 1738 Cognac
- .5 oz Michter’s Single Barrel Rye Whiskey
- .5 oz Cointreau
- .75 oz Champagne Lime Cordial***
- Dehydrated Peach Powder
Directions
- Dust the outside of a chilled, stemmed cocktail glass with the peach powder.
- Combine the rest of the ingredients in a mixing glass.
- Stir with ice.
- Strain into the peach crusted glass.
***Champagne Lime Cordial
- 500 g Clarified Lime Juice (the recipe will work if the juice isn’t clarified but it won’t have the same clarity in the glass)
- 250 g sugar
- 8 g lactic acid
- 8 g tartaric acid
Cordial Directions
- Combine all ingredients in a blender.
- Blend on medium high until fully incorporated.
- Fine Strain
- Store in a clean glass container under refrigeration for up to three (3) weeks
