What’s your favorite ingredient when it comes to Mexican cuisine? For us, it’s definitely avocados. But if you suggest they’d be just as good mixed into a margarita, you might see us raise an eyebrow. But Manuel Lema, Head Bar Manager at Ixchel in Chelsea, insists that the flavors belong together. It’s one of six different versions of the classic cocktail offered at the London bar and certainly the most interesting.

What inspired the name? What’s this drink’s origin story?

Authentic Mexican tastes like tequila, agave, avocado and corn.

What other drinks belong in its family?

We offer 6 different margaritas on our cocktail menu anf all of them are different from each other, but also keep the base ingredients from a classic margarita with traditional Mexican flavours.

If you like smooth and traditional flavors you should try this drink.

What food is this cocktail best served with?

With our main dishes definitely, as it is quite fresh to clean the palate for but also helps to highlight the mix of different flavors that our food offers

Ingredients

Patron silver, avocado puree, corn liqueur, lime juice and natural agave syrup

Directions

We add all the ingredients into a mixing glass with plenty of ice cubes, then we stir the ingredients to mix them. We serve the margarita into a tumbler glass with clear ice cube 5cm x 7cm which were previously stamped with the name of our restaurant, IXCHEL, and add an avocado leaf as garnish.

*Avocado Puree:

  • Avocado: 100 grams
  • Still Water: 7oz
  • Sugar Syrup: 0.88oz

We blend all this ingredients and then strain them into a squeeze bottle to use it on service
