Le Hibou Bar Manager Brasse Wallefelt tells us…
Please describe Le Hibou as if you’re explaining the experience of walking through the doors and ordering your first drink.
The first thing that happens while walking in the entrance is that you get met by a strong red colour and a mystic vibe in an alley that takes you to the elevator. When you get in the elevator you press the 8th floor and the ride will take you about 40 seconds. For every floor you pass by the music will slowly get louder.
You’ll be greeted as soon as you step out of the elevator and then we will ask you where you prefer to sit, On the terrace, inside on a couch or at the bar. The music you’ll hear is classic Buddha bar vibe. As soon as you’re seated we will pour you a glass of water, welcome you, explain the menu as well as the drinks. After you order, it takes a maximum of 7 minutes for you to get your drink.
How would you describe Le Hibou in a three-word text to a friend that you’re trying to convince to join you?
Genuine, Mystic, Tasteful.
Other than Le Hibou, what else is happening in the neighborhood that you’re in?
A lot of good things are happening in the neighborhood. We are lucky to have Lucy’s Flower Shop, Röda Huset, The Cadier Bar, and more great bars and restaurants in the area. This results in the comfort for guests to go around to different places in one night without walking more than 2-5 minutes. This also makes it easier for the staff to recommend as well for us to get recommended.
Aside from Happy Hour, when is the best time to get to the bar?
The best time to go to Le Hibou For me is after dinner, every day. Have a cocktail, sit on a couch, enjoy your company and enjoy your cocktail.
Describe the average drinkers that you serve?
The guests are highly varied. The ages between 18-80. I’d say that 70% are ordering a signature cocktail as their first order. Other than that our classics program is super wide, so we serve a lot of classics as well. Our guests do know what they like, and they have a high expectations when coming here.
Please tell us more about your drinks menu.
The current menu’s name is “The View”. We take inspiration from different places and buildings that we see from Le Hibou, that’s why the name. For example, we have one drink called “Hanami Garden” where we are recreating “Kungsträdgården” in a cocktail. In the summer, there are a lot of cherry trees blossoms, so in our drink we have Roku Gin, Mancino Sakura, Mint cordial, and Sakura tea.
What’s your signature drink–or your favorite drink currently on the menu–and why should I order it?
My favourite at the moment is a cocktail that’s called “Nordic & Co”. It contains Naked grouse, Cardamom, Cloudberries and Galliano. The perfect drink for any time really. A sipper style of drink but still not too heavy. A lot of flavours but not hard to understand. Just a banger of a drink. Order it!
How much do drinks cost?
The drinks cost 195 SEK. (18 dollars-ish)
Is there anything to eat? If so – what’s your favorite dish on the menu?
We don’t do warm food. Just a few snacks. The favourite is the truffle gruyere with some prosciutto.
What are the distinguishing features of Le Hibou?
I’d say that the distinguishing feature of Le Hibou is the high quality of hospitality. That the staff always walk the extra mile for both guests and colleagues. Our drinks are obviously also one of the things as well as a wine list with over 2000 labels and a View to die for.
What’s that music we hear playing on the Le Hibou stereo?
Mystic buddha bar kind of style. A lot of the music you hear is music you’ll hear for the first time.
