The owners of the internationally acclaimed bar have announced the launch of debut akvavit, Fury.
In June 2007, partners Adeline and Rasmus Shepherd-Lomborg opened award-winning cocktail bar Ruby with a vision to take Copenhagen’s drinks scene to new heights – their ambition was to match the city’s culinary reputation. Now, seventeen years of hard work and success have led the duo to open Mælkevejen Distillery.
Located in Ørslev, a municipality south of Copenhagen, the new operation also houses an event space to accommodate 150 guests and a cafe gift shop. The distillery is made up of an eclectic mix of people from Denmark’s hospitality industry.
The distillery’s team have worked together to create an Akvavit that celebrates the cultural heritage of Denmark’s traditional spirit that they believe has become underused over the last 100 years. Mælkevejen’s intention with Fury is to modernise people’s perspectives and shine a light on the lesser-known spirit by taking it in new directions. The new product has the traditional caraway base yet uses tropical flavours pineapple, coconut, ginger, lime, fennel and lemongrass to create spicy and herbaceous notes.
Just like Cognac, Gin and Whisk(e)y – Akvavit has its own regulated spirit category, which means there are rules to adhere to. It must be at least 37.5% alcohol and can only be made from a base of dill or cumin. Their debut expression Fury has roots in the classic caraway based akvavit but taken in a tropical direction. The result is versatile aquavit that’s perfect in a number of applications and is ideal for pairing with tonic, in cocktails and for the classic Akvavit cold table serving.
Ruby, which presents an ever-changing menu of cocktails that utilises locally-sourced and micro-seasonally ingredients, has used the newly released Fury Akvavit in its new cocktail, Carrot Cake.
