Oaxacan Potion
- 1 1/2 oz cilantro infused mezcal*
- 1/2 oz spicy habanero agave**
- 1/2 oz Maraschino liquor
- 3/4 oz lime juice
- 1 oz egg white
- Spray of absinthe
- Garnish with some chilly threads and smoked
Take all ingredients and pour them into a shaker. Dry shake/shake without ice. Then add ice and shake again. Strain into glass. One spray of absinthe from an atomizer. Garnish with chilly threads.
* Place ¾ cup of cilantro leaves into the bottom of a 1.5 Pint Mason Jar. Fill the rest of the jar with a mezcal of your choice (we recommend an espadin) and seal with a lid. Give the mixture a good shake to distribute ingredients, and let sit in a cool dark place for three to four hours, shaking occasionally. After three-four hours, strain ingredients out through a fine mesh strainer, and place your infused mezcal into a sealed jar.
** In a small saucepan over medium heat add the agave, sliced habanero, and water. Heat to steaming but not boiling, about 5 minutes. Remove from heat and cool. Strain out the habanero pieces and seeds.
Store in a glass container. Will keep in the refrigerator for 3 weeks.
Pro Tip: Wear gloves. The oil from habanero peppers tends to stay on your hands even after washing.
