Located in lively Sol, Oroya tells the story of Peru in both food and drink form, while mixing it with influences from Spain, Africa, Italy, China and Japan. Vines crawl across the walls and plants hang from the ceilings, and that’s just inside, outside provides a similarly lush experience, making the bar one of the most colorful and vivacious in Madrid.
The cocktail menu celebrates the atmosphere and the cuisine, using ingredients less often seen at bars without such creative insights and contemplative approaches. Thoughtful techniques and a lively yet relaxed atmosphere makes this one of the city’s most enjoyable places to sip a drink.

Please describe Oroya as if you’re explaining the experience of walking through the doors and ordering your first drink.
As you walk into OROYA, you’re met with a relaxed, convivial greenhouse-like setting framed by a blackened steel cage clad with climbing plants and coloured glass panels. Enjoy a cocktail such as the famous Pisco Sour or a glass of wine from the menu curated by sommelier Julio Barluenga at the bar, before heading to your table to enjoy a relaxed tapas menu with family-style sharing plates such as Ceviches, that tell the story of Peru’s cultural history with influences from Spain, Africa, Italy, China and Japan.

Set in a tranquil square surrounded by historic buildings, The Madrid EDITION is near Puerta de Sol in the heart of the Spanish capital, one of the city’s most famous sites, and within walking distance to The Golden Triangle of Art – three of the most important art museums in Madrid, the Royal Theatre, and the Royal Palace, amongst other historic sights.
Aside from Happy Hour, when is the best time to get to the bar?
OROYA overlooks the hustle and bustle of the city, with a lively yet relaxed atmosphere and a joyful bartending team, spear-headed by our head bartender Matteo Bernardo. The team always has a shaker in hand, ready to make delicious creations for our guests. During the summertime, the Spanish tradition of a 12 o’clock vermouth or evening aperitif makes it the perfect time to experience OROYA.
Is there anything to eat? If so – what’s your favorite dish on the menu?
Yes, I have two favorite dishes from our menu devised by our Michelin-starred Chef partner, Diego Muñoz. These are the Ox Heart Anticucho and the Sea Bass and Prawns Ceviche, two dishes that capture the essence of Peruvian cuisine with an OROYA twist.
What are the distinguishing features of Oroya?
The distinguishing features of OROYA include the greenhouse-like setting with climbing plants and colourful glass panels that cast bright patterns across the room. Outside, we have OROYA’s terrace which is a seductive garden in the sky featuring a fireplace and a vine-covered pergola, and beneath sits a bleach teak bar and rattan bar stools, alongside a long oak table, perfect for lazy lunches with friends and family.

With a mix of in-house guests, locals and visitors, we serve a wide range of mixology-lovers. Our guests are seekers of authentic flavors and contemporary twists on traditional drinks, making every drink a customized experience between bartender and guest.
Please tell us more about your drinks menu.
Our drinks menu is always in line with OROYA’s philosophy of bringing Peru’s history, and ingredients and techniques from Spain, Italy, Japan, China and Africa. The inspiration for our menus relies on the traditions of Peru, always trying to integrate a forgotten spice or herb.
What’s your signature drink–or your favorite drink currently on the menu–and why should I order it?
One of my favorites is the Lúcuma Old Fashioned, a complex creation with silky tones and exotic flavors.
