Oslo-based cocktail bar and distillery Himkok is headed to Copenhagen for a one-night-only celebration of aquavit at Bird in Frederiksberg.
On May 13th, Oslo’s Himkok will head to Copenhagen to takeover neighbourhood cocktail bar, Bird. Aquavit brand LINIE is responsible for bringing together the two bars, which will showcase a specially curated cocktail menu celebrating the flavours of Norway and Aquavit.
The takeover is part of the Himkok Journey series, which will introduce guests around the globe to Himkok’s soon-to-be-launching own aquavit made in collaboration with LINIE. The collaboration involves ageing Himkok’s in-house aquavit in LINIE’s oak sherry casks and in the brand’s traditional techniques of sailing across the world before returning to Norway. Himkok LINIE left Oslo’s harbour in 2023 and is set to return in the Summer of 2024.
In the afternoon, the Himkok team will present a talk on the versatility of aquavit through a tasting of the LINIE Aquavit range and a sample of it in a cocktail. Himkok will present Parsnip, Cherry, and Apple cocktails, which will use different expressions from the LINIE range as well as Sage using Himkok’s own unaged aquavit.

Himkok Aquavit, Timur Cordial, Brewed Ginger, Sage, Soda Water
The evening will spotlight each bar’s unique styles of cocktails and hospitality, marrying Bird’s minimalist and modern approach with Himkok’s innovative cocktail craftsmanship. The Himkok team will present three cocktails made using LINIE aquavit, from their ‘Fashion Meets Mixology’ menu which was developed in collaboration with Norwegian fashion designer, Eline Dragesund to showcase the similarities of the innovation, expression, and individuality behind fashion and mixology.
