Danish distillery Stauning has just added a rye whisky to its core range, HØST
Stauning is launching HØST, a Danish rye whisky. Bottled at 40.5% ABV, the unique rye and single malt blend is the latest addition to the whisky maker’s core portfolio. HØST, which translates to ‘harvest’ in Danish, honors the natural beauty of the West Denmark landscape and the season that provides the grains essential to these Danish whiskies.
Stauning HØST first matures in bourbon and heavily charred new American white oak casks before being finished in port barrique casks. It features fruit-forward floral undertones on the notes along with aromas of vanilla, beeswax and citrus. The palate delivers meadow honey, toffee, apple, and red berries, with a syrupy cinnamon, oak and subtle spice finish.
HØST is made with grain from the fields surrounding the distillery, with every grain floor-malted in house–a process not often seen in distilleries today. Distillation and maturation all take place on-site, which helps showcase the terrier of western Denmark.
“Each harvest, farmers give over a portion of their fields to wildflowers, adding a riot of colour to the stretches of grains that carpet the land,” notes Alex Munch, one of Stauning’s founders. “We created HØST to celebrate the closeness of nature and nurture, the deliberate rye and barley hand-in-hand with the sudden colour of wild flowers, just as our modern, sustainable distillery sits alongside acres of green fields.”
