This Tequila-based version of an Old Fashioned from New York’s Overstory uses white wine and Yellow Chartreuse to create an terroir-inspired instant classic

There’s no shortage of modern riffs on the Old Fashioned, but few (if any) have earned the regard that the Terroir Old Fashioned from New York’s Overstory has. The cocktail utilizes a mix of aged Jura white wine, Yellow Chartreuse, reposado Tequila, and agave caramel that manages to turn the drink into something completely unique that still showcases why the classic version continues to be a favorite of bars across the globe.

Terroir Old Fashioned

What inspired the name? What’s this drink’s origin story?

The Terroir Old Fashioned pulls together hyper-specific local ingredients from various regions. It’s a combination of palo santo-infused reposado tequila and vin jaune. The drink is finished with Tilden Sea Salt, harvested in Fort Tilden. Though tequila is the base spirit, the drink has a deep whiskey-like quality from the caramelized agave syrup. The result is a Mounds Bar flavor with a hint of yellow chartreuse.

What food is this cocktail best served with?

Fried chicken is one of my favorite things to eat with almost any drink. But the citrus and chili-marinated version that we serve at Overstory is the ideal complement.

Ingredients

  • Tsp Yellow Chartreuse
  • .25 oz. Agave Caramel (60 Brix)*
  • .75 oz. Vin Jaune
  • 2 oz. Reposado Tequila (Toasted Palo Santo)

Recipe

  • Method: Stirred
  • Glassware: Rocks
  • Garnish: Lemon Discard & Honeycomb
  • Menu Description: Reposado Tequila, Palo Santo, Tilden Salt

*Burnt Agave (Caramel)

  • 500 ML Agave Nectar
  • 250 ML Water
  • 8g Sea Salt (Fleur de sal)

Method: Add Agave & Salt to a large rondeau pot (shallow and wide). Let caramelize and darken, DO NOT STIR (7 Minutes) 350 degrees level 20. Remove from heat. Gently pour water into hot agave, please be very careful as it spits. Mix well, check Brix with a refractometer to achieve 60brix. Bottle, Label and Store for use.
